Tikka Masala Potato
To make - sauté 7 sliced shallots with 1 tsp mustard seeds in 2 tbsp of butter.
Add some plain chilli powder and 1 tsp turmeric/kunyit powder.
Stir.
Add about 7 boiled and sliced potatoes (with the skin), some sliced coriander leaves, 1/4 tsp chat masala (or garam masala or all spice powder) and salt.
Stir over high heat for a couple minutes.
Dish out.
Optional - for a little tanginess, add some lime juice while stirring the potatoes.

Broth - simmer carrot, red onions, lemongrass and galangal. Drain, pour broth in pot, add a piece of palm sugar, season with salt and continue to simmer.

Other ingredients: blanched kuey teow/noodles, carrot stripes, diced tofu, mushroom, crushed peanuts, sliced chillies and lime.

Fry basil leaves in oil.

Pour coconut milk, soy sauce, add mushroom and tofu in broth. Assemble kuey teow, chilies, crushed peanuts, carrot, chilies and fried basil leaves. #CookWithNavaK

Claypot Nava’s Kerala Style Mango Fish Curry.
1. dry fry 1 tbsp coriander seeds, 1 tsp cumin, fennel & black pepper seeds & dried red chillies. Blend with water.

2: fry 1 tbsp ginger paste, 1 tsp garlic paste, 6 crushed shallots, 1 tsp fenugreek seeds & curry leaves.

3: add curry paste, fry and when oil splits, add sliced tomato (1 no), tamarind juice, fish, salt & pour enough water. Simmer.

4: when fish is 3/4 cooked, add mangoes, simmer till tender, lastly add 1/2 cup coconut milk.
A light simmer, done.

Pair mango fish curry with "no cook" carrot and cabbage raita - chopped carrot(s), cabbage, coriander leaves, onion, red and green chillies, yogurt and salt. #CookWithNavaK
