Stock/broth - simmer carrot, cabbage, onion, kafir lime leaves (limau purut) and Thai basil leaves with 10 cups (or as needed) of water.

Curry paste; blend 1 lemongrass, red and dried chilies(as needed), white part of spring onion (3 to 4 stalks), 1 tbsp coriander seeds and 1 tsp cumin seeds. Fry paste in oil till aromatic.
Pour stock in & simmer.

Assemble: noodles, mint and basil leaves, puffed tofu and a dash of black pepper. Thai curry laksa. Pour curry broth over noodles and slurp into the amazing Thai flavors.

Vinaigrette Tofu Sambal (Vegetarian)
To make:
3 firm white Tofu - cut diagonally to 4 pcs (see picture)
Add some salt, fry to lightly brown on both sides, remove and keep aside.
Leave about 3 tbsp of oil in the same wok/pan.
Sauté 5 chopped shallots.
Add dried chilli paste - as needed (grounded/blended dried chillies)
Cook till aromatic.
Add 2 chopped tomatoes and 1 cup of water.
Stir and cook till mushy.
Add some palm sugar/Gula Melaka, 1 tbsp vinegar and some salt.
Stir.
Add fried tofu, stir & dish out.

Chana dal thogayal/chutney.
Soak dal (1/2 hour) & drain off water. Fry in oil and keep aside. In the same pan, leave abt 1 tbsp oil. Fry curry leaves, chilli & cumin seeds. Add back dal inside, stir and remove frm heat. Pulse/blend in blender with yogurt, milk and salt till creamy and smooth. #plantbasedrecipe #vegetariancuisine #CookWithNavaK
