Malaysian Style Black Pomfret/Bawal Hitam Curry
blend
2 green chilies,
1 1/2 tbsp fish curry powder,
1 tsp turmeric powder,
5 shallots,
1/2 inch ginger
and 7 garlic with some water for the curry paste.

Fry till aromatic and oil splits with 1 tsp fenugreek/halba in 3 tbsp of oil.
Add sliced brinjals (2 medium size) and enough water for gravy. Simmer till brinjal is 3/4 cooked.

Add fish, 1 cup thick coconut milk and 2 sprigs curry leaves.
Season with salt.
Simmer to cook fish.
Off the heat and combine in some coriander leaves and 2 tbsp of coconut oil.
Note: coconut oil is optional but does make the curry so-so delicious!!!.

Ikan masin buncis sambal/salted fish French beans chili.
To make -
fry 2 tbsp dried chilli paste with
1 tsp garlic paste or chopped garlic,
1/2 tsp belacan powder,
4 sliced shallots and
1/4 handful of soaked and rinsed kurau/threadfin salted fish (see pic).
Add string out and sliced one packet beans.
Stir.
Pour some water for gravy and to soften beans.
Stir, season with a little salt, palm sugar and lime juice.
Stir and dish out.

Thai vegetable soup.
To make:
sauté 1 smashed lemongrass,
5 smashed shallots
and 5 smashed garlic in 2 tbsp of oil.
Add 1 sliced tomato and
1 stick sliced lotus root (remove skin).
Stir,
pour enough water for soup
and simmer to soften root.

Add 1 sheet soaked fucuk/tofu sheet,
2 bay leaves and
1 broken cinnamon.
Season with salt and heat through.
Add 1/4 sliced cabbage and simmer for another 2 to 3 mins. Off the heat and
combine in some basil leaves.

Thai plant Based Fried Rice.
Heat 4 tbsp oil,
sauté 1 large sliced onion,
1 lemongrass and
1/2 inch ginger.
Add 4 cups rice,
stir,
add 2 tsp veg granules (optional) and
salt,
stir,
add 1 cup sliced pineapple
and 2 red chillies,
stir and
remove from heat.
Let it cool down a bit,
combine in 5 sliced daun kaduk,
sliced spring onion and
1/2 cup fried peanuts.
Note: adjust quantity of ingredients for smaller portion.
