Fish ball pakora/fritter.
To make -
whisk 3/4 cup besan flour with
4 chopped shallots,
2 chopped green chillies,
a little thinly sliced coriander leaves,
and salt and tonic or soda water (as needed) for a smooth batter.

Keep aside for about 20 minutes. Add 1 packet fish ball (pat dry) and gently mix.

Heat enough oil for frying.
Fry 2 sprigs curry leaves (oil must be hot),
remove and keep aside.
Scoop fish ball one by one with batter,
deep fry, drain over kitchen towel and place on a serving plate.

Lightly crush fried curry leaves, sprinkle on top and serve with chili sauce.

Note: soda/tonic water can be replaced with plain water but to fluff up batter, add a pinch of baking powder.
Batter should be at a consistency you prefer.

Beet aloo aka Beet Cutlets.
Kid friendly, fried, crispy on the outside and soft inside tiki, add chillies if you like.

Ingredients
1/2 beetroot - remove skin, grate and squeeze out juice
2 small potatoes - simmer till soft, remove skin and mash
2 slices bread - lightly wet
1 red onion- chopped
Some coriander leaves - shredded
Salt
Oil as needed

Method
Mix all ingredients except oil.
Roll and flatten mixture, bit by bit and fry.
Walla.

Turmeric Curry Leave Cabbage. Heat 3 tbsp oil,
sauté 1 tsp mustard seeds with 1 sliced red onion.
Add shredded cabbage (1/2 medium size),
1 tsp turmeric powder,
curry leaves,
season with salt,
stir quickly and
remove from heat.

Salted Egg Tofu
To make (ingredients as needed). Slice tofu.
Microwave or steam for one minute.
Arrange on a serving plate. Gently crumble boiled salted egg(s).
Place atop tofu, alongside sliced coriander leaves and red chilies. Drizzle some soy sauce
and serve with calamansi lime.

Ponnanganni keerai/green veg crispy fried in ghee.
Only 3 ingredients, quite sinful with the amount of ghee but vouched truly nice.

To make: Heat ghee,
add the plucked leaves and
some curry leaves,
season with little salt and continuously stir till crispy
and without burning.
Dish out.

Sambal budu ikan bilis/anchovies. To make (ingredients as needed). Fry soaked and rinsed bilis till crispy.
Remove and keep aside.
Slice shallots, red chillies, green chilies and chilli padi.
Pound with bilis,
season with budu,
lime juice and
a little sugar.
