Nasi goreng udang geragau (dried shrimp fried rice).
In 3 tbsp of oil,
fry 6 chopped garlic with
2 tbsp soaked and
rinsed shrimps till crispy.

Add 3 cups cooked rice.
Stir all together.
Add 2 sprigs sliced spring onion and 1 cup frozen green peas. Season with salt and pepper.
Stir again and remove from heat.

Add on a plate and top up with fluffy egg.
Pair with chillies in soy sauce.

chopped shallots.

Malaysian Plant Based Potato Sambal.

Heat 2 tbsp mustard oil, sauté 1 large chopped red onion.
Add 1 tsp garlic paste/or chopped garlic and 1/2 tbsp dried chilli paste.
Stir and cook till oil splits.
Add 2 chopped tomatoes, stir and cook till mushy.
Add 4 boiled and sliced potatoes (with the skin).
Add some coriander leaves and salt.
Stir and cook till dry over high heat.
Walla!!!

Attukal (lamb leg) soup.
To make:
add 1/2 kg lamb leg (chop into pieces),
1 inch smashed ginger,
6 smashed garlic,
6 smashed shallots,
1 sliced tomato and
enough water in a pot.
Simmer to a nice boiling point.

Add sliced potatoes (2x) and sliced carrot (1x),
1 1/2 tsp turmeric powder,
2 tsp plain chili powder and salt. Simmer to soften both: potatoes and carrot.
Add 1/4 cauliflower floret and continue to simmer for another 3 mins.
Remove from heat.

In another pan,
heat 2 tbsp coconut oil and
fry 3 sliced shallots.
Add spices (bay leaf, cinnamon, star anise and cloves - as needed) and
3 sprigs sliced coriander leaves. Stir and fry.
Tip into soup and stir.

pour milk in a wok,
simmer over very very low heat while stirring to prevent from burning.
Strain and store in a bottle.

Nasi goreng belacan (shrimp paste fried rice).
To make: in 3 tbsp oil,
scramble 3 eggs.
Remove and keep aside.
In the same oil (pour more oil if needed),
fry 1 big sliced red onion
with 2 tbsp soaked and
roughly pounded dried prawns. Stir in.

Add sambal belacan, quickly stir and add 3 cups cooked white rice.
Season with salt.
Stir all in,
add scrambled eggs and 2 sprigs sliced spring onion.
Stir a few times and remove from heat.
Top with sliced salad leaves bf serving.

Chickpea Masala -
Coconut oil
Chopped 🧅 onion and curry leaves.
Fenugreek Seeds/Halba.
Plain chilli powder.
I can of chickpea. Add all. Including the sauce/liquid.

Add mango powder (or tamarind juice or lime juice) and salt.
Pour some water if you want to for more gravy.
Stir.
Dish out.
