Old cucumber kei chi/wolfberry soup. To make: sauté lightly pounded 4 shallots, 4 garlic and 1/2 inch ginger in 2 tbsp of oil. Add 1 sliced tomato, stir till mushy, add sliced cucumber (see pic) and enough veg stock (or plain water and season with veg cube).
Simmer to soften cucumber,
add 1 handful soaked kei chi/wolfberry and
season with salt and pepper. Simmer to heat through, stir and remove from heat.

Spinach egg tofu.
3 ingredients for this side dish.
To make:
cut egg tofu into pieces.
Lightly fry in a little oil to lightly brown both sides.
Never mine if tofu break up.
Add about 7 to 10 lightly crushed garlic (remove skin).
Stir.
Add 1 bunch spinach (cut roots, slice and rinse thoroughly). Season with salt.
Stir fry over high heat to soften and dish out.
