Ghee Masala Mutton Roast
mutton
1/2 kg mutton (with bones preferably)
Cut into bite sizes.
Pressure cook (abt 6 to 7 whistles) with 1/2 tbsp ginger paste, 1/2 tbsp garlic paste and 1/2 tbsp turmeric powder.
Cool down, separate meat from its liquid and keep aside.
curry paste
1 tbsp/or as needed plain chilli powder
1 tsp coriander powder
1 tsp fennel powder
1 tsp cumin powder
1/2 tsp crushed black pepper.
Mix these ingredients with some water for a thick paste.
Other ingredients
2 tbsp ghee
7 shallots - slice thinly
1 tomato - slice into small pieces
Some curry leaves
Spices - 2 bay leaves, 2 star anise, 4 cloves and two cinnamon
Salt to taste
Method
Heat ghee
Sauté shallots and curry leaves for light crispiness.
Add curry paste, spices and tomato.
Stir till aromatic and oil splits.
Pour in mutton liquid.
Season with salt.
Simmer and cook to thicken gravy (see pic).
Add mutton and stir in.
Don't cook till really dry.
So, while still soggy, off the heat.

Add chicken pieces (abt 7 medium size)
1 sliced tomato
1 tsp ginger paste
1 tsp garlic paste (or sliced ginger and garlic)
1 tsp turmeric powder
2 cinnamon
1 star anise with enough water (abt 4 cups).
Simmer over low heat to cook chicken and season with salt.
Off the heat, add green veg, stir and garnish with sliced coriander leaves and spring onion.

Cauliflower potato soup.
Heat 2 tbsp butter and sauté 1 tsp ginger paste, 1 tsp garlic paste and 2 bay leaves.
Add 1 sliced tomato, stir, add cauliflower florets (abt 1/4 portion) and 3 potatoes (cut into medium chunks).
Stir, pour 1/2 liter veg stock and simmer to soften both.
Season with salt and pepper and of the heat.
Combine in parsley leaves (or coriander leaves).

The convenient way to a healthy
soup.
Add spice sachet, pork or chicken, 1 sliced tomato and water in to a pot, simmer over very very low heat.
Then, you can add some soaked and sliced black fungus, some soaked red dates and kei chi/wolf-berries (these are optional). Stir, season with salt and simmer for another couple of minutes. Done.

Tom Yam Seafood Spaghetti - awesomeness.
Al dente spaghetti, in a light sauce, yet, the quintessential Thai tastes gets on to your palates (RM23.00)
Mango Mousse Cake - light crunch from one of the ingredients in the bottom layer, and silky smooth mango cheesy burst from the top layer RM15.00)
Both of these shared between both of us. Filling enough.
Drinks - sky juice (free)
All in all, a really appreciated dining experience. Nice.
