Caramelised Onion Radish.
Sauté one large sliced red onion to let lightly caramelise (don’t burn though), add julienne radish and salt.

Stir, close with a lid, cook over low heat to soften.

Nasi serai dan daun kaduk/Lemongrass Betel Leaf Rice
Cook rice with a pinch of salt and fluff up while still hot. Add 1 sliced lemongrass and about 10 shredded betel leaves. Stir and serve.

Thai style fish
Impressive to look but simple to put together. Here's how.
One medium piece of ikan kurau or any firm fish.
Rub and mix fish with 1 tsp turmeric powder, 1 tsp corn flour, 1 tsp rice flour, 1 tsp plain chilli powder and some salt.
Fry in oil, remove and place on a serving plate.

For the raw salad
1 lemongrass
1 bunga kantan/ginger torch bud
2 sprigs coriander leaves
3 shallots
1/2 inch ginger
1 green chilli, 2 birds eye chillies/cili padi
1 handful fresh pineapple
1/2 carrot.
Thinly slice these ingredients (see pic).
Add some fish sauce, some crushed palm sugar, some lime juice and 2 tbsp crushed roasted peanuts.
Add salt if needed.
Toss together and top over fish.

Note: adjust ingredients as per taste.

Sambal Oelek Telur/Indonesian Egg Sambal.

Ingredients
6 hard boiled eggs - remove skin
2 tbsp udang geragau (tiny shrimps) - thoroughly rinse
1/4 cup oil
Salt to taste
Some sliced red chillies

For the sambal paste
3 fresh red chillies
1/2 inch fresh turmeric
4 shallots
6 garlic
1/2 inch roasted belacan/shrimp paste
1 large tomato
** blend these ingredients with some water.

Method
Heat oil.
Tip in sambal paste and udang.
Stir and cook till aromatic and oil splits.
Season with salt.
Pour in 1/4 cup of water.
Stir.
Drop in eggs.
Add sliced chillies.
Stir a couple of times.
Dish out.
