Palak Curry (spinach gravy).
Fry 1 tsp cumin seeds, 1 tsp fennel seeds and 1 sliced red onion.
Add 1 sliced tomato and cook till slightly mushy.
Add 1 bunch sliced spinach, stir to wither and remove from heat. Add into blender/processor with 1 cup carton milk and 2 tbsp yogurt and pulse till smooth.

Pour into pot and simmer to heat through but do not over boil. Temper 2 sliced dried red chillies and 2 sprigs curry leaves in ghee or oil, tip and stir into spinach mixture.

Saffron rice - 2 cups washed pusa gold extra long basmati rice, 1/4 tsp saffron strands, a pinch of salt and 3 cups water into the rice cooker.
Cook, fluff up and done.
