Baby brinjal ghee raita/yogurt gravy. Easily made with just a couple of ingredients.

Some brinjals (abt 12, remove stem and score at the bottom but still intact.
Add a little salt and turmeric powder.
Mix and fry till soft in some ghee.
Now, add some sliced onion, green chilli and curry leaves.
Stir.
Add yogurt and salt - as needed.
Stir in and dish out.

Simplicity in the simplest form. Salad leaf scrambled egg - oil, garlic, a bunch of sliced salad leaves, eggs, salt and pepper.

Tanni Saar (sweet leaf/cekur manis) in dhal coconut gravy. Add 1/2 cup dhal (soaked for an hour),
7 crushed garlic,
5 crushed shallots and
1 tsp turmeric powder in a pot with enough water.
Simmer to soften dhal.
Add leaves,
pour 1 cup thin coconut milk, season with salt and
continue to simmer.

In another pan,
heat 2 tbsp ghee or oil,
fry shallots,
add 1/2 tsp mustard seeds,
1/2 tsp cumin seeds and a handful of coriander leaves.
Fry, tip into dhal mixture, stir and remove the pot from heat.
