Happy Night World♥️♥️♥️. Before I hopped into bed, let me share this #recipe which popped up in #facebook. I might as well.

Indian Yogurt Soup.
To make:
simmer 1 sliced tomato,
1 sliced green chilli,
1 sliced red onion,
5 crushed garlic,
3 sprigs curry leaves and enough water till soft and mushy.

Pulse/blend till smooth.
Pour back in the pot.
Add 1 tsp turmeric powder,
1 tsp chilli powder and
season with salt.
Add more water if you want to dilute the soup.

Simmer to heat through.
Remove from heat. Whisk in 3 tbsp yoghurt and
add crushed black pepper.

Cabbage & Egg Stir-Fry: A quick and healthy meal
To make:
Heat 2 tbsp of oil.
Sauté 1 sliced red onion.
Add 1/3 shredded cabbage.
Stir quickly and push aside.
Break 3 eggs in the centre. Season with salt and pepper.
Fold cabbage over and gently stir.
Combine in 2 sprigs sliced spring onion and dish out.

Mango chutney.
To make: sauté 5 chopped shallots,
1/2 inch chopped ginger,
3/4 tsp cumin seeds,
3/4 tsp halba/fenugreek seeds and
3 sprigs curry leaves in 3 tbsp of oil.

Add 2 sliced mangoes,
1 tsp turmeric powder and
1 tbsp kashmiri or plain chilli powder.
Stir and pour enough water to cook and soften mangoes. Season with palm sugar, tamarind/asam juice and salt. Stir and dish out.

Note: nicer taste with palm sugar instead of white or brown sugar.
