Easy Vegetarian Tauhu sambal.
To make:
Heat 2 tbsp of oil.
Sauté 1 sliced tomato,
5 smashed shallots and
I sliced green chilli.
Pour in 2 tbsp chilli sauce. Season with salt.

Add 2 sliced tauhu.
Gently stir to cook.
Off the heat and combine in some sliced spring onion.

Masak Lemak/Coconut Stew (Vegetarian).
An accompaniment for rice - a Malaysian traditional dish.

To make (ingredients as per taste, do adjust please)

Add 2 sliced tomato,
1 sliced large red onion,
1 red chilli and 2 cups of water in pot.
Simmer to soften and mash (see pic).

Add I smashed lemongrass,
1 tsp turmeric powder and season with salt.
Simmer for 2 to 3 mins.
Pour 1 1/2 cups coconut milk.
Simmer to heat through.

Off the heat and combine in 1 sliced turmeric/kunyit leaf.

Oilless Lentil Rasam -
the quick version with instant rasam powder.

To make -
Add 1 sliced tomato,
10 garlic (remove skin) and
1/2 cup yellow dhal/lentil (soak for 1/2 hour) with 2 cups of water in a pot.

Simmer to soften dhall and mash.
Add 2 tbsp of rasam powder and 1 tsp turmeric powder.
Stir.
Pour water (say about 5 to 6 cups or as you like).

Simmer to just heat through.
Off the heat.
Season with salt and black pepper.
Combine in some coriander leaves or curry leaves.

Butter Masala potato.
To make - sauté 7 sliced shallots with 1 tsp mustard seeds in 2 tbsp of butter.
Add some plain chilli powder and 1 tsp turmeric/kunyit powder.
Stir.

Add about 7 boiled and sliced potatoes (with the skin),
some sliced coriander leaves,
1/4 tsp chat masala (or garam masala or all spice powder) and salt.

Stir over high heat for a couple minutes.
Dish out.
Optional - for a little tanginess, add some lime juice while stirring the potatoes.

Raisin egg curry.
To make: in 4 tbsp of oil,
sauté 1 big chopped red onion,
1 tsp ginger paste,
1 tsp garlic paste,
1 cinnamon, 3 cloves and 3 lightly crushed cardamom.
Add fish curry paste (fish curry powder mixed with water).

Stir and cook till aromatic.
Pour enough water for gravy.
Add 3 sprigs curry leaves,
2 tbsp raisins and salt.
Stir and simmer.

Add 6 hard boiled eggs.
Simmer, remove from heat and cover with the lid before serving.

Optional: add tamarind juice or lime juice.
