Turmeric/kunyit bendi (okra). To make: sauté 3 sliced dried red chillies, 4 sliced shallots and 1 tsp cumin seeds in 2 tbsp of oil. Add about 1 packet thinly sliced bendi, 1 tsp turmeric powder, 2 sprig curry leaves and salt. Stir and fry to soften bendi to a preferred texture. Dish out.

Optional: sprinkle a little water while frying to further soften bendi.

Ikan goreng berempah (spicy fried fish).
For the rempah -
blend
1/2 inch fresh turmeric
3 shallots
1 lemongrass
4 garlic
1/2 inch ginger
7 soaked dried red chillies
to a paste.

Mix paste with 2 large kembong/ other suitable fish (cut into 2 pcs each).
Add the whole thing inside a wok and simmer to cook fish and to thicken the rempah.

Remove, cool down and keep in the fridge for at least 1/2 hour. Deep fry and serve with lime.

Ghee Sodhi (coconut milk gravy)
To make:
Add 2 sliced tomato, 4 sliced shallots and 1 cup of water in a pot.
Simmer to soften.
Then mash (see pic)
Add 3 cups coconut milk, 1 tsp fenugreek seeds/halba, 1 tsp turmeric powder and salt.
Stir and simmer to heat through.
Remove from heat and keep aside.
Into a pan, heat 2 tbsp ghee.
Quickly fry 1 tsp mustard seeds, some dried chillies and some curry leaves.
Combine in sodhi mixture.

Black bean chicken Chinese soup.
Ingredients:
1 cup black beans (boil till 3/4 tender)
300g minced chicken (mix with 1 tsp ginger & 1/2 tsp garlic paste)
one handful red dates (soaked & scored in the center)
dash of sesame oil
dash of black vinegar
coriander leaves
Oil
pepper
salt.

Method
Mix minced chicken with ginger and garlic paste.
Fry in 2 tbsp oil while breaking it into pieces.
Put in black beans,
pour water (abt 4 to 5 cups or as preferred) and
simmer over very low heat.

Add red dates and salt to taste. Simmer till beans and dates are soft and tender.
Add black vinegar, sesame oil and pepper.
Done.
