Dried prawns fried rice. Ingredients:
2 tbsp dried prawns (soaked for 10 min and drain off water)
2 cups cooked rice
5 garlic (chopped)
2 eggs
1/2 cup green peas
sliced coriander leaves
3 tbsp oil
salt.

Heat oil, scramble eggs and remove.
In the same oil, fry prawns till crispy, add garlic, stir, add rice and stir.

Into rice, add green peas and coriander leaves.
Season with salt,
stir a couple of times,
add scrambled eggs,
stir and remove from heat.

Sawi with tofu.
To make:
sauté 4 thinly sliced shallots with 1 tsp cumin seeds.
Add sliced tofu (1 piece),
1/2 tsp turmeric powder and
salt.
Stir.
Add 1 bunch sliced sawi, stir to soften and dish out.

Brinjal chutney.
Ingredients
6 medium size brinjals
1 tsp turmeric powder
1/2 tbsp rice flour
handful of shallots (sliced), curry leaves and dried chillies; tamarind juice
sugar or palm sugar
cinnamon (2), cardamom (3), cloves (3), star anise (2),
oil and
salt.

Rub rice flour, turmeric and salt over brinjals, deep fry and remove.

Fry curry leaves, shallots and dried chilies and remove from oil(all 3 separately and till crispy).

Simmer tamarind juice, spices and sugar.
When caramelized, add fried brinjals, curry leaves, shallots and dried chillies.
Off heat and stir all in.

Tomato rasam.
Simmer 2 tomatoes with 3 cups of water, mash when soft and tender,
add smashed garlic (6 nos),
1/2 tbsp cumin powder,
1 tsp crushed black pepper,
1 tsp turmeric powder and salt. Let it simmer over low heat.

Pour tamarind juice (as needed), simmer and remove rasam from heat.
Heat 2 tbsp oil, fry coriander leaves till crispy, add dried chilies and mustard seeds,
stir,
tip into rasam and stir.
