Butter tomato rice.
Ingredients:
2 cups rice (rinse and drain)
2 tbsp salted butter
1 handful cherry tomatoes
salt (use sparingly)
3 cups water.

Method
Heat butter in rice cooker. Add rice , stir.
Add tomatoes, salt and stir in.
Allow rice cooker to do its job. Once done, fluff up rice. Optional: garnish with Chinese parsley.

Papadam with coriander yogurt dip.
For dip: dry fry 1 tsp cumin seeds, add chili flakes, toss and remove from heat.
Add in 3 tbsp yogurt, chopped coriander leaves, salt and mix.

Fry papads (see pic: press center with tong for a hollow effect), remove and serve with dip.

Potato Rendang.
Ingredients: gravy paste:
blend -
6 dried red chillies
I inch kunyit (fresh turmeric)
5 shallots
5 garlic
1 serai/lemongrass
1 inch galangal/lengkuas
1 inch ginger.

Boil 5 potatoes till 1/2 cooked, peel skin and cut into 4 pieces.

Other ingredients:
I kunyit leaf (sliced)
2 small asam keping (dried tamarind)
1/2 cup thick coconut milk
1 1/2 tbsp kerisik (fried pounded fresh coconut)
salt.

Method:
add blended paste, coconut milk, asam keping and salt in a wok.
Cook to thicken.
Add potatoes, stir and cook.
Add kerisik, stir in and lastly add kunyit leaf and stir in.

Chinese Style Lala/Clams
To make (ingredients as per taste):
soak and rinse 1/2 kg lala thoroughly.
Gently mix with 1 tsp ginger paste and 1 tsp garlic paste.
Add in a pan with
smashed chillies
curry leaves, salt and
enough water for gravy.
Simmer till lala opens up. Combine in oyster sauce and sweet soy sauce.
Stir and off the heat.

Tomyam fish.
Score fish on both sides, rub
1 tsp cornflour,
1 tsp rice flour,
1 tsp turmeric
and salt over fish.
Fry, place on plate with daun kaduk (optional).

Tomyam sauce:
heat 3 tbsp oil,
fry sliced onion(1), sliced lemongrass (1) with 1 1/2 tbsp ready made tomyam paste.

Add sliced cherry tomatoes (4), stir, add 1 piece palm sugar, season with salt, pour 1 cup water, simmer, add sliced lime leaves (4), stir and tip over fish.
