Kai Lan (Chinese broccoli) garlic chilli oil.
Slice 1 bunch kai lan, blanch in hot water for 2 mins, rinse and pat dry/squeeze out water.
Heat 3 tbsp oil, fry 7 chopped garlic till crispy, remove from heat, stir in 1/2 tbsp chilli flakes, season with salt, stir and tip over veg.

Lemongrass tofu stir fried.
Ingredients
1 packet brown flat tofu - slice into pieces
2 lemongrass - slice thinly
7 shallots - slice thinly
1 green chilli - slice thinly
Some spring onion - slice thinly
Salt and lime juice to taste
3 tbsp of oil

To make
Sauté lemongrass, shallots and lemongrass in heated oil.
Add tofu and salt.
Stir and cook over high heat to lightly brown tofu on both sides.
Add spring onion and lime juice.
Stir in and dish out.

Nasi Minyak (literally means oil rice).
Heat 3 tbsp ghee/minyak sapi, fry 1 handful of cashew nuts, remove and keep aside. Do the same to 1 handful of raisins/kismis.

Fry 1/2 tbsp ginger paste,
1 tsp garlic paste, and
spices (2 cinnamon, 2 star anise, 4 cloves and 4 cardamom),
add 1 smashed lemongrass,
1 sliced red chilli and
1 sliced green chilli.

Stir, add 2 cups washed basmati rice, stir and tip into rice cooker. Add 1 tsp turmeric powder, pandan leaves (knotted),
2 cups carton milk,
1 cup water and
season with salt.
Stir and cook.

Once done, stir in 1/2 tsp saffron strands mixed with a bit of hot water (optional).
Garnish with fried cashews and raisins bf serving.

Yau mak choy (sayur minyak) oyster sauce.
Separate leaves from two bunches and blanch in hot water for 1/2 min.
Pat dry/squeeze out water and put in a plate.
Pour oyster sauce, top with shallots fried in oil and fresh ginger stripes.
