The complete congee set:
Rice congee
Basil stir fried potato
Black bean anchovies

Kunyit/turmeric Ikan bilis/anchovy cabbage.
To make: fry 2 tbsp soaked and rinsed bilis till crispy in 2 tbsp of oil.
Add 5 smashed garlic, 6 smashed garlic and 1 sliced tomato and stir till mushy.
Add 1/2 cup coconut milk, 1 tsp turmeric powder, 1/2 shredded cabbage and salt.
Stir and cook till soft.
Off the heat and combine in 1 shredded turmeric leaf.

Yam cashew nut and dried chilli. Steam or simmer I medium size cubed yam till soft.
Cool down and dust over 1 tbsp rice flour, 1 tsp corn flour and salt.
Keep aside.
Fry 1 handful of cashew nuts till crispy, remove and keep aside.
In the same oil, do the same to yam.
Remove excess oil, quickly fry 7 crushed garlic and dried chillies (as needed).
Pour 3 tbsp water, simmer, add yam, cashews, season with salt. Stir, off heat and combine in sliced coriander leaves.

Nava’s Lamb Rib Masala.
Pressure cook 8 pieces of lamb ribs with
1/2 tbsp ginger paste
1 tsp garlic paste and
1 1/2 tsp turmeric powder.
Once done, mix in plain chilli powder(as needed).

Sauté 1 sliced large onion,
pieces of dried chillies and spices( 3 small cinnamon & 2 star anise).

Add mutton,
3 sliced potatoes,
stir,
add 1 tsp cumin powder,
2 tsp coriander powder and
1 tsp crushed black pepper. Season with salt.
Pour enough water, stir, cover and cook. Remove lid and stir in coriander leaves.

Oyster sauce veggies.
In two tbsp heated oil, add 6 smashed garlic, 6 slices of ginger and sliced tofu (2pcs).
Gently fry to lightly brown tofu.

Add 1/2 sliced carrot and 1 packet sliced corn ( blanch both in hot water for a couple of mins to soften), 1 sheet soaked and broken fucuk.
Stir, pour 2 tbsp oyster sauce,
stir and combine in sliced spring onion. Salt (only if needed).

Broth - simmer carrot, red onions, lemongrass and galangal.
Drain, pour broth in pot,
add a small piece of palm sugar,
season with salt.
Continue to simmer over very low heat.

Other ingredients:
blanched kuey teow/noodles
carrot stripes
diced tofu
mushroom
crushed peanuts
sliced chillies and
lime.

Fry basil leaves in oil.

Pour coconut milk (as needed)
soy sauce (as needed)
add mushroom and
tofu in broth.

Assemble kuey teow,
chilies,
crushed peanuts,
carrot,
chilies and
fried basil leaves.
Pour broth, over and serve. #

Butter Garlic Rice (rice cooker cooking)

Washed rice, smashed garlic, a little butter (optional) and some salt in the rice cooker to cook and fluff up.

Kai Lan (Chinese broccoli) garlic chilli oil.
Slice 1 bunch kai lan, blanch in hot water for 2 mins, rinse and pat dry/squeeze out water.
Heat 3 tbsp oil, fry 7 chopped garlic till crispy, remove from heat, stir in 1/2 tbsp chilli flakes, season with salt, stir and tip over veg.
