Thai style potato fried rice (vegetarian).
Cut two potatoes into thin long stripes, fry in batches till crispy, remove and keep aside.
Leave abt 2 tbsp of oil in the same wok.
Fry 5 sliced shallots, 1 smashed lemongrass and 1/2 inch smashed galangal/lengkuas.

Add 3 cups rice,
pour 1 tbsp sweet soy sauce and season with salt (taste first).
Stir, add one handful of salad leaves or green veg,
3 sliced lime leaves and add back fried potatoes.
Stir on high heat a couple of times and remove from heat.

Takkali keerai kootu (type of spinach in thick mixture).
To make:
add 1 sliced tomato,
1 sliced potato,
1/2 cup soaked and rinsed dhal,
4 smashed garlic,
4 smashed shallots,
1 tsp turmeric powder and enough water in a pot.

Simmer to soften and lightly mash.
Add 1/2 tbsp coriander powder,
1 tsp cumin powder, and
1 tsp fennel powder.
Stir,
add leaves and season with salt. Cook to soften leaves and pour in 1 cup coconut milk.
Stir,
heat through and remove from heat.

In another pan, heat ghee/oil, fry 1/2 handful of curry leaves till crispy,
add 1 tsp halba/fenugreek seeds and 2 sliced dried red chilies.
Stir and tip into veg mixture.

Stir and cook to soften beans. Add some water, if you want to, to soften beans.

Two Brinjals - sliced,
mix with some turmeric powder, some rice flour and. salt.
Fry in batches, remove and keep aside.

A little oil to fry green chillies, onion and curry leaves.

Add brinjal, a little salt and a little lime juice. Stir and dish out.
Easy Vegetarian Tauhu sambal.
To make:
Heat 2 tbsp of oil.
Sauté 1 sliced tomato,
5 smashed shallots and
I sliced green chilli.
Pour in 2 tbsp chilli sauce. Season with salt.

Add 2 sliced tauhu.
Gently stir to cook.
Off the heat and combine in some sliced spring onion.

Snake gourd kootu (cooked with peas).
To make:
cut one gourd, remove seeds and slice.
Add with 1 sliced tomato
1/3 cup green peas without skin (soaked for 10 mins)
4 sliced shallots
1/2 inch sliced ginger
4 sliced garlic
1 tsp turmeric powder
salt and enough water.

Simmer till soft and tender. Temper/fry 5 sliced shallots
1 tsp fennel seeds and
2 sprigs sliced coriander leaves in 1 1/2 tbsp ghee or oil.

Combine into gourd mixture.

Green brinjal parathal/stir fried. To make:
simmer about 13 small green brinjals to soften.
Remove, cool down and sliced/cubed.
Add in a bowl with
1 tsp plain chilli powder,
1 tsp turmeric powder,
1 tsp cumin seeds,
5 sliced shallots,
3 sprigs curry leaves and
salt to taste.
Gently mix together.

Heat 2 tbsp of oil, add brinjal mixture, stir over high heat for a couple of minutes and off the heat.
Combine in a little lime juice.

Spring onion potato sambal (vegetarian)

To make
For the sambal paste
6 red chillies
1 tomato
1/2 handful spring onion (only the white part)
**blend/pulse these ingredients with some water

Other ingredients
4 potatoes - boil till tender, cool down and slice
Palm sugar - per taste
6 shallots - slice
Some sliced spring onion
Oil and salt

Method
Heat enough oil.
Fry potatoes, remove and keep aside
Leave about 5 tbsp of oil in the same wok.
Add sambal paste and shallots.
Fry till aromatic and oil splits
Season with palm sugar and salt.
Note - pour some water for more gravy (optional).
Add potatoes, stir, off the heat and combine in some spring onion.

Kerala style drumstick aviyal
To make
add sliced drumsticks (7 sticks, remove string and sliced to 1 inch)
1 tsp ginger paste
1 tsp garlic paste
1 1/2 tsp turmeric powder and enough water for gravy.
Simmer to soften sticks.
Add 1/4 cup lightly pounded fresh coconut.
Season with salt.
Stir.
Off the heat

Temper
1 tsp mustards seeds
1 tsp cumin seeds
1 sliced red chilli
1 sliced green chilli
2 sprigs curry leaves
in 2 tbsp ghee or oil.
Tip into gravy and combine in 1/4 cup whisked yoghurt.

French beans stir fried with coriander seeds.
To make: remove strings and slice beans (1 packet) to 1/2 or 3/4 inch length.
Add in bowl with 1 tsp ginger paste, 1 tsp garlic paste, 1 tsp coriander seeds, 1 tsp turmeric powder and 2 sprigs curry leaves. Keep aside.

Heat 2 tbsp of oil, tip beans inside, season with salt and stir fry over high heat.
Dish out.
Sprinkle some water while frying to further soften the beans.

Cumin saffron rice.
Ingredients:
2 cups rice (rinsed)
1 1/2 tbsp ghee
1/2 tsp saffron strands (alternatively 1 tsp turmeric powder)
salt.

Heat ghee in rice cooker, fry cumin seeds for 2 to 3 mins, add rice, stir, pour 3 cups of water, saffron, season with salt and stir. Let it cook and fluff up.
